Chef Joe Murphy

Culinary Director

Chef Joe Murphy, a Las Vegas native, developed a passion for Japanese culture and cuisine early on, even forging Japanese swords as a teen. He studied Japanese and Business Management in college and began his culinary journey as a dishwasher at Sen of Japan, a top Kaiseki restaurant. Mentored by the owner and head chef, he quickly advanced in the kitchen, mastering the art of Japanese cooking. Joe’s journey from the bottom up taught him the values of humility, discipline, and the pursuit of excellence in his culinary career.

Now, as the Finn Food Hall Culinary Director, Joe curates the food operations for three new dynamic concepts inside Finn: an authentic Korean BBQ, the art of proper smash burgers, and a Japanese izakaya sushi bar. His expertise ensures each concept delivers an elevated and authentic dining experience. Additionally, Joe is the curator of private catering menus and food operations across all of Jones on Main’s amenities, bringing his refined culinary vision to private events and exclusive dining experiences.
